Favourite Foods – Snails

 

When the rain falls and the ground is damp the snails come out.  So do the snail hunters. 

Cartagena people love fat, juicy, snails, often cooked up with rice as a special treat. Not any old snail can be eaten; it is the “trompeta” snails, with trumpet-like openings, that are the gourmets’ favourite.  

The snails are collected and kept in special baskets, made from tough esparto grass. They are cleaned and washed carefully and then added to paellas and other rice dishes.
