Favourite Foods – Paella 

Paella is a very sociable dish. You have to make it in large quantities, lots of stirring is needed and, of course, the odd drop of something to drink. 

All through the summer in and around Cartagena fiestas are arranged in suburbs and surrounding towns and villages and a frequent highlight is a giant paella, which takes hours to cook and which is then enjoyed by everyone. 

The finest rice in the world for paella making comes from Calasparra in northern Murcia where it is grown in fields irrigated by the Segura River. This rice has a fat grain that splits perfectly as it cooks to absorb the delicate flavours, such as saffron, of the paella.   Calasparra rice has its own Denomination of Origin recognition and you will find it in the local supermarkets and shops.
