Migas – A Man’s Meal 

Keep an eye out when reading local menus for “migas.”  This is a traditional favourite of the Cartagena area. 

Migas were a staple of the country diet when labour in the fields was hard and lots and lots of cheap calories were required.  The dish is made by pouring flour into lots of oil, constantly stirring all the time.  Sometimes dry bread is used instead and traditional kitchens always had a little bag to store odd pieces and leftovers. Then “tropezones”, or surprises, are added. These are usually pieces of meat or chorizo sausage and they give the migas its flavour. 

 

Making migas is definitely not a job for the inexperienced foreign cook.  Locals love it and scoop down bowls full whenever it is featured in bars and cafes.  Migas are often served when it is raining as people who would otherwise be working in the fields were then indoors and had time to enjoy it properly.
